Eggplant Zucchini Rolls

1 Eggplant
1/2 Eggplant diced
2 Small tomatoes, diced
1 diced zucchini
1/4 onion, diced
1 garlic, minced
1/4 cup feta cheese
1 teaspoon balsamic vinegar
1 teaspoon olive oil
1/2 teaspoon basil
Sea salt
Black Pepper

1.- Slice eggplant long way.  Grill all the eggplant slices.

2.- Sauté garlic and onion in olive oil. Add salt, pepper, balsamic vinegar and diced eggplant. Then add tomato, zucchini and basil.
3.- Take one grilled eggplant slice, add  one tablespoon of the sautéed vegetables. Add cheese a little cheese and make into a roll.
